Shallow Sun Club will provide a fresh and international culinary experience under the reins of Manuel Berganza in the restaurant, lounge area and swimming pool with bali beds and hammocks. Berganza, Azotea Grupo’s executive chef, is the youngest Spanish chef to have been awarded a Michelin star outside of Spain, thanks to New York-based Andanada 141, a tapas restaurant in the heart of Manhattan.
Crafted by Luca Anastasio, Azotea Grupo’s head of bars and mixology, the cocktail menu also plays an essential part in the big opening. Three times winner of World Class Diageo Spain and with a brilliant 18-year trajectory that started is his homeland, the Amalfi Coast in Italy, Luca Anastasio has now become a world-renowned mixologist.
